This covers a lot more than basic broth, although he does teach 'how-to' in detail. It's a fun read, will give everyone ideas & encouragement. My input: Use as clean bones as you can : no antibiotics or GMO grains/alfalfa fed to animals, best of all would be grass-fed or wild (hunters, save your bones, they are healthy!) Free-range chickens, the best you can find. Backyard chickens that are fed non-GMO grain/scratch, freely forage for insects, fed organic or eat wild greens are top of the line! The insects are full of Omega 3's, which we are starving for. We NEED healthy fats to live well, thrive. The Big Lie that is destroying us Americans is that FAT IS BAD. I appreciated the beginning of the books explanation of health issues stemming from processed foods & society's fear, even, of cooking food for ourselves. Much info I was already familiar with from other reading I've done, but I appreciate the simple explanations he used and will go back to them for ways to better communicate the concepts to other people.I love how he doesn't try to teach you how to be a chef, but just a good home cook- leave out what you don't like, and substitute what sounds good to you. Or even leave out ingredients if you don't have them or can't find them. The flexibility in cooking is very freeing.For the recipe part of the book, I was pleasantly surprised at the wide variety of recipes he includes. I guess because I've subscribed to his email newsletter for a good part of this year, I was expecting mostly Asian soups, so finding some familiar soups in the book was a nice.I use my stocks for gravy and sauces, sautéing sliced potatoes keeping roasts moist while cooking in the oven and others things besides soups, so the foundation here is great for overall cooking, not just soups.I've been making chicken & beef stock for years, but now I can't wait to try making fish stock too. It will be fun to try out so many new soup recipes and see what the family likes.I'm very happy with this book and would highly recommend to anyone wanting to do more from scratch, improve health, and depend less on processed foods for your family.
Craig Fear is an awesome resource for all of your soup-making needs and more! This cookbook is simple and easy to read. It is a fabulous addition to a well-stocked real-food cookbook library! The author even went to Thailand to learn more about traditional broths and soups. He is a well-studied chef with a knack for tasty soup recipes! Mr. Fear is also a very intelligent Nutritional Therapy Practitioner with a thriving practice that helps people take back their health, heal their digestion, inflammation, and more! This cookbook is only a snippet of his awesome work. I have been a follower of his blog, "Fearless Eating," for a while, and I have gleaned lots of good nutrition advice that has improved my health. I use a few of his posts as references for friends who see how healthy I am and want advice. I use this book often, especially in the winter when I'm constantly making soup!
Found the book original and inspiring. Wonderfully written, even funny at times.In the 'out of the box' part of the book, the author challenges our western ideas of what a 'healthy' breakfast should be. Instead, he offers an alternative: eat broths for breakfast!As I myself have been having soups and broths for breakfasts for years now, I did not need convincing to know that it is a great idea (especially in winter). But the author's recipes are so much more creative than my own that I learned a great deal from him. Am now going to experiment with his ideas and include them in my cooking (for example, have never heard of Congee before).For those readers who want to stay 'in the box', there is a selection of traditional soups with little tweaks and variations. Something for everybody.All in all, a great cookbook for healthy living.
An excellent book on soups and broths. Enjoyed it tremendously. Like every recipe book I have ever had I do not use all the recipes included. For example my wife and I aren't big on fish so those recipes are of little use to us. But there are a good number which are right down our alley. Most of these recipes are simple and do not require exotic ingredients, which is a common shortcoming of too many cookbooks. Also appreciate the "cook" as opposed to the "chef" approach adopted in this book. Thank you Craig Fear for that. I am interested in becoming a better and more versatile cook not a chef. The broth breakfast section is priceless in my opinion and worth the price of the book. Highly recommended.
This book has really opened my eyes to many non-western diet options. Everything I have made from these recipes has been super delicious but even better these recipes have helped me take more control over my diet. A great read!
Great BookI'm really enjoying this book and the recipes I've tried so far are excellent. I've made some of them more than once. The author makes the story of broth interesting and it's a very nice read. I've been making broth for years but bought this due to the concept of having broth in a dish for breakfast. Can't wait to try that too.
